В статье проведен анализ производства молока в семи регионах Урала на протяжении послевоенного двадцатилетия. Констатируется, что условия, в которых оказалось молочное хозяйство Урала в начале исследуемого периода, во всех отношениях были кризисными в силу последствий недавно закончившейся мировой войны. Акцентируется внимание на том, что этот период во многом стал судьбоносным для СССР, так как уместил в себе целый ряд знаковых событий социально-исторического плана. Многие из этих событий прямо повлияли на развитие одной из важнейших отраслей экономики — сельского хозяйства, в том числе на его «молочную» сферу. В работе приведена динамика производства молока на протяжении исследуемого периода в сравнении с РСФСР и СССР, выявлена роль индивидуальных хозяйств населения в молочном хозяйстве, которая в течение двух десятков рассматриваемых лет постепенно снижалась. Установлено, что основными производителями молока в регионе в 1946—1965 гг. являлись Башкирская АССР, а также Свердловская и Чкаловская/Оренбургская области. Приводимые в статье материалы подтверждают стабильное наращивание производства молока в 1946—1965 гг. В результате такого роста уровень его потребления отдельными категориями населения ко второй половине 1960-х гг. достиг научно обоснованных цифр.

The article analyzes milk production in seven regions of the Urals during the post-war twenty-year period. It is stated that the conditions in which the dairy industry of the Urals found itself at the beginning of the study period were in all respects critical due to the consequences of the recently ended world war. Attention is focused on the fact that this period in many respects became fateful for the USSR, as it contained a number of significant social and historical events. Many of these events had a direct impact on the development of one of the most important sectors of the economy — agriculture, including its “dairy” sector. The paper presents the dynamics of milk production during the study period in comparison with the RSFSR and the USSR, reveals the role of individual households in the dairy industry, which gradually decreased over the two decades under consideration. It has been established that the main producers of milk in the region in 1946—1965 were the Bashkir ASSR, as well as the Sverdlovsk and Chkalov / Orenburg regions. The materials presented in the article confirm the steady increase in milk production in 1946—1965. As a result of this growth, the level of its consumption by certain categories of the population reached scientifically substantiated figures by the second half of the 1960s.
